Caldo Verde


This is a variation on a classic Portuguese soup most sometimes called The Green Soup

Smoked Sausage (6" lengths)

Potatoes (peeled and cubed)

Fresh Kale (cut into short strips)

3-4 cloves Garlic (chopped)

2 tbls Cracked Black Pepper

1 tbls Salt

Boil everything except the Kale.

When the potatoes reach a crushable state remove the sausage and crush them in the pot (Don’t mash, you want a chunky consistency).

Chop the sausage and add it back to the pot. Bring to a boil again and add the Kale.

Turn off the heat and let it sit 15-20 minutes to cook the Kale. Serve.
