Cold Spaghetti
Onion (coarsely diced)
Black Olives (sliced)
Tomatoes (diced)
3 eggs
1/4 cup Cheddar and Jack or fresh Parmesan (or your favorite) Cheeses
Sauté the onion in a little olive oil, then add in the tomatoes and olives. Throw on a good, thick layer of cold spaghetti, continuing to cook until it is warmed through.
The eggs should be beaten and the cheese mixed in thoroughly. Pour this mixture over the cooking spaghetti mixture.
Now you are cooking an omelet and are ready for the really fun part. Flip It! I find it easiest to slide it out of the pan onto a plate, place the pan over the plate and flip it back over.
I promise, the gymnastics are deliciously worth it.
