JALOPENO SPINACH BALLS

2 10 OZ PKGS Frozen Spinach

1/2 cup Pickled Jalapeno Peppers (diced)

1 Onion (diced)

4 Eggs (beaten)

3/4 cup Melted Butter

1/2 cup Parmesan Cheese (freshly grated)

1/2 tsp Garlic Powder

1/4 tsp Black Pepper

2 cups of your favorite dried stuffing

Thaw and completely drain the spinach.

Thoroughly mix all of the ingredients and refrigerate at least 2 hours.

The mixture should be ready to form into small balls.

Place these onto a cookie sheet and bake them for 30 minutes.

You can also freeze the formed balls to cook later.
